As the Food and Beverage Manager, you will be in charge of our food and beverage operations, leading the team towards excellence and profitability. Your role is crucial in ensuring the highest standards of service and operational efficiency. Here are the key responsibilities and guiding principles of this role:
Key Responsibilities:

- Food and Beverage Operations Management: Oversee the entire food and beverage department, ensuring smooth operations and maximum profitability.
- Monitoring Forecasts and Par Levels: Regularly monitor food and beverage forecasts and par levels to minimize waste and optimize profit margins.
- Real-Time Feedback: Provide timely and real-time feedback to management and executives, focusing on service and operational standards, including attention to the smallest details of service and operations.
- Supplier Relations: Establish and leverage relationships with local suppliers to support the operational needs of the food and beverage department, in conjunction with the purchasing department.
- Quality Assurance: Ensure that the bar and kitchen adhere to the highest quality standards, focusing on organization, productivity, sanitation, and inventory management.
- Compliance Audits: Conduct regular compliance audits with management and executives, ensuring adherence to work aids such as the opening and closing checklist, production charts, freezer pull controls, inventory order checklists, temperature logs, fridge mapping/zoning, and space organization.
- Technological Problem Solving: Provide training on operations and troubleshooting for Micros and other technological components in the common areas of the property, ensuring smooth operations.

RESPONSIBILITIES
- All staff must refrain from receiving visitors.
- Staff in the dining and event areas (when applicable).
- Measure staff productivity according to sales per person.
- Utensils and linens,
- Products and supplies,
- Electronic sound equipment and payment system.
- Guarantee the quality of products prepared from the kitchen to the table.
- Produce photographic content of dishes, ambiance, and activities in the restaurant and deliver to marketing.
- Must cover schedules during low hotel occupancy.
- Report anomalies that compromise the physical and moral safety of our guests, staff, facilities, or the image of the Resort.
- Maintain an impeccable, clean, and decent personal image both inside and outside the resort.
- Maintain personal image according to the standards set in the internal conduct code document.
- Organize tastings of every new dish on the menu, with all staff. Validate presentation and flavors for general knowledge.
- Lead the preparation, carving or plucking, and presentation of the dish in front of the diner (live cooking).
- Supervise economic data related to the F&B activity, establishing budgets, controlling costs, and managing inventory of both beverages and materials and supplies used in the department.
